Combi oven and steam oven operation: tips to prevent damage and injury

Here is a quick refresher for operators, maintenance crew and flight attendants using the combi oven or steam oven in Global 6500 and Global 7500 aircraft. Following these tips will prevent accidents and possible damage to the appliance. 

First, it is important to install the trays in the proper slides, or channels, to prevent the trays from falling while they are holding hot food (applicable on combi and steam ovens). 

For the combi oven, there is another risk associated with incorrectly installed trays. The microswitches will not be able to detect the tray inside and therefore will not prevent microwave mode from starting. This may cause sparks or arcing. 

Also, be careful when using the top tray position. Make sure that food is not touching the oven liner, the light cover, or the screws (illustrated in Figures 4 and 5).  

We recommend using the second tray position (shown in Figure 4) to prevent risk of fire or smoke. 

For any additional instructions, please follow the appliance user manuals and the unit CMM’s provided at aircraft delivery.
